Google Doodle Celebrates The Best Breakfast Food, Chilaquiles

Any gourmet will be delighted with today’s Google Doodle. Ironically, I cooked chilaquiles for myself twice this week—one of my favorite morning dishes—and the Doodle is a tribute to them.

Google claims that guest artist Chava Oropesa of Oakland is responsible for creating the Doodle.

Even though the chilaquile isn’t very fancy, you may add any flavor you choose to it. A couple of fried eggs, enchilada sauce, cheese, and fried tortilla chips or strips are the bare minimum for this dish. Melt the cheese and enchilada sauce over the chips, then add the eggs and cook until done. Efficient, tasty, and a breeze!

Chilaquiles, like other Mexican cuisine, differ in preparation depending on the location in which you encounter them.

You may top it with everything your heart (or stomach) wants, such slow-cooked pork or chicken, avocado, guacamole, salsa, cotija cheese, melted queso, jalapenos, or anything else you can imagine. If you really want to get creative, you could combine biscuits and gravy chilaquiles with green chile gravy and use corn muffins instead of biscuits.

My point is, this is a terrific chance to make the world right if you haven’t tried chilaquiles before. You may chose red or green enchilada sauce. I believe it’s just great out of a can, but if you wanted to get real fancy-like, you could create it from scratch. Just don’t overcook the eggs! You want the yolk nice and runny. Another nice option is to prepare your own tortillas and use some for tacos for supper, then take whatever’s left and fry them up for breakfast the following day.

Chilaquiles may be traced back to ancient Aztec times, but were first brought to American consumers by Encarnación Pinedo, “The Spanish Cook” in 1898. I’ve eaten them in Mexico and even US restaurants, but generally I simply prepare them at home.

I would add, a decent batch of hash browns with runny eggs is also in the race for finest morning dish. And it’s hard to beat homemade biscuits and gravy. But I suppose if I had to select only one breakfast for life, it would be chilaquiles. Though I do also adore morning tacos.

Or maybe huckleberry pancakes. Hard to beat huckleberry pancakes.
